To make this delicious bowl, make chicken and beans according to the below recipes, then add rice, salsa, avocado, cheese, herbs and make it your own!
Easy Taco Chicken
This is fast, easy, flavorful, and perfect for being on the go. Definitely kid-approved.
You will need:
2 cups of chicken (pull the meat off the bone to shred it or chop the chicken) – I use a Store bought rotisserie chicken or whole cooked chicken, or pre-cooked chicken of any kind
½ sweet onion, chopped
Small can of chopped chilis (I prefer mild but choose your spice preference)
½ cup of any kind of jarred salsa
I take a sauté pan and sauté the onions. As they turn translucent, I add my chillis, then I add chopped chicken and mix all together. I lightly sauté the salsa over the mixture, and that’s it! You’re ready to add to a bowl, taco, torta, salad, whatever.
Nor Family Beans
This is a spin-off of the traditional feijoada beans that are served in Brazil. Since my father’s side of the family are Brazilian, we make a vegetarian version that can be used with any kind of bean. I used red beans with this recipe.
You will need:
½ an sweet yellow onion, diced
2 cloves of fresh garlic, chopped or sliced
2 cans of red beans
1 bay leaf
2 tbsp of chopped fresh cilantro
1 tsp of ground cumin
½ tsp of smoked paprika
Salt and pepper to taste
Sauté your onions and then add bay leaf, smoked paprika, and cumin. Let all the spices cook with the onion until the onions become translucent. Add garlic and sauté a little more. Then add your beans. Let them simmer on low heat for 5-10 minutes, add chopped cilantro, and serve over rice.
