Artichokes, Mama-Style

  • Pot of hot water, 

  • 2 fresh artichokes

  • Or 1 artichoke per person

Yummiest addicting sauce ever

  • 6 fresh Garlic cloves

  • 1 tbsp of Mayo

  • 2 tbsp of butter, melted

  • The Juice of 1 lemon

  • 1 clove of garlic, minced

  • Season salt, I like SPIKE

  • tiny pinch of cayenne pepper

Prep the artichokes:

  1. Cut off the outer leaves.

  2. Take the pot that fits your artichokes with some room and fill it half way up with water. 

  3. Put it on high heat.  When water starts to boil put your prepped artichokes in to the water and cover. They will float. 

  4. Let boil on medium heat for 30/40 minutes.  The way to check the artichoke is to see if a leaf will pull off with ease.

make the sauce:

  1. Take your butter and minced garlic and melt quickly in microwave or on stovetop for 30 seconds. 

  2. Add mayo and stir quickly.

  3. Squeeze in lemon juice and seasoning.

  4.  Serve with drained artichokes immediately!

Please note: this is not meant to be an aioli, it’s meant to be a little runny.

If you want to char the outside of the artichokes then cut them in half, scoop out the furry looking section in the middle of the artichoke and brush oil or clarified butter all over the leaves and put them on a grill for 2-5 minutes on each side. Or until the they get that little bit of char on the outside. Remember they are already cooked so this is not necessary unless that’s the look you are going for.
