Shaved Moroccan Cauliflower Salad

Serves 4-5 people, family-style

  • 1 half of a head of shaved raw green cauliflower

  • 1 half of a head of shaved purple cauliflower (you can use any and all colors of cauliflower; shaving should be 1/2 centimeter thick of just the florettes. Save the core to make a soup a mash or compost it.)

  • 1 cup of canned or cooked garbanzo beans

  • 1/4 cup of sliced almonds skin on

  • 1/2 Madjool dates, sliced

  • 2 tbsp of hemp hearts

Lemon Dijon Dressing

  • 1 tsp of Dijon

  • 1 tsp garlic chopped fresh

  • 1 tsp of honey

  • 2 tbsp of lemon juice

  • 1/2 cup of oil ( sunflower oil)

  • 1 tsp kosher salt

  • 1/2 tsp of white pepper

Make your dressing first. Add garlic, mustard, salt, honey and lemon juice. Mix well, then slowly incorporate oil while continuing to mix well. Season to taste.

Put all your salad ingredients in a bowl. Hold some hemp hearts aside to sprinkle on top for garnish. Pour dressing on top and lightly toss all together. Serve and enjoy!
