Coconut Green Curry Veggie Bowl

Serves 4 people

Veggies

1 Sliced Zucchini

½ a Red pepper, sliced

½ a small Yellow onion, sliced

1 small Carrot, skinned and sliced

5 pieces of Broccoli flowers

3 pieces of Cauliflower florets

2 tbsp Garbanzo Beans

Quinoa

1 cup of Quinoa, cooked

1 tbsp of chopped Cilantro

1 Garlic clove, chopped

Curry Sauce

2 tbsp of green Curry Paste

1 tbsp of honey

1 small can of unsweetened coconut milk

 

For the quinoa:

  • Make some quinoa, according to instructions on the quinoa you purchased.  Set aside.

  • In a saute pan saute garlic in a small amount of oil and then toss in quinoa and cilantro, set that aside for serving.  

For the veggies and sauce:

  • In a saute pan, saute all veggies together, until they are slightly tender, about 5-7 min on high heat, constantly moving the veggies around in the pan. Then add the curry paste, the coconut milk, and the honey.  Mix all together and serve with your sautéed quinoa in a bowl… yum yum yum! 

  • ****You can always add chicken or any protein to this, by cooking the protein separate and then putting in the veggie mix!!
